Homemade Beans On Toast Recipe

Introducing:

SHAPESHIFTERS THORKA BEANS AND POACHED EGGS ON TOAST

ingredients (to serve 1)

HOMEMADE BEANS ON TOAST:

EGGS (POACHED)

3

sourdough bread (GLUTEN FREE)

2 slices (Schar brand)

baked beans (low sugar, low salt)

200g (Heinz brand)

red onion

75g (diced)

garlic

3 cloves (crushed)

mixed leaf salad

Garnish

ginger

1 thumb-sized piece (diced)

coconut oil

1 teaspoon

fenugreek seeds

1 teaspoon

cumin seeds

1 teaspoon

turmeric

1 teaspoon

paprika

1 teaspoon

coriander

1 teaspoon (fresh)

stevia (sweetener

½ teaspoon

Himalayan salt

To taste

pepper

To taste

INSTRUCTIONS

Add 1 teaspoon of coconut oil to a hot pan, then once the oil is hot, add the cumin and fenugreek seeds to be toasted lightly for 1 minute.

Then add in the onion, ginger and chopped garlic to the same pan and cook for a few minutes, using hot water periodically to stop the mix from sticking to the pan.

Once the mix has softened, add in the turmeric, paprika and baked beans before stirring thoroughly. Then season thoroughly with salt, pepper and Stevia, before cooking for a further 3-4 minutes.

Whilst the beans are absorbing the flavour from the Thorka base, boil some water ready for the poached eggs and toast the sourdough bread.

Once the water is ready for the eggs, poach them for 2-4 minutes dependant on preference. Then serve them on toast, with the Thorka beans (garnished with coriander) on the side in a small bowl.

Finally, add a seasoned side salad to your plate and enjoy!
