Start by, adding the milk, oats, banana, eggs, cardamom pods, baking powder and salt to a blender. Then blend until a batter-like consistency has been formed and taste test. If the mixture isn't sweet enough for you, then add some Vanilla flavour drops and blend again (repeat process until happy with flavour).
Next, heat a non-stick pan before adding a teaspoon of coconut oil. Once the oil is melted and has covered the pan base, start adding the batter to create pancakes in a 2" diameter.
Cook for 2-3 minutes before flipping the pancakes and cooking the other side. Using a pan lid to trap in the moisture during cooking, which creates a fluffier pancake.
Meanwhile, make the peanut butter powder into a paste, by mixing it in a bowl with a few drops of water.
Then once your pancakes have cooked, build your pancake stack, adding the peanut butter paste to each layer. Then top off with strawberry yoghurt and blueberries to finish.
Serve and enjoy.
So there you have it! A macro-friendly Protein Pancakes recipe to help you stay on track when your sweet tooth needs some TLC, I hope you find it a great alternative.
