Introducing:
SHAPESHIFTERS HOMEMADE FISH FINGER SANDWICH
FISH FINGER SANDWICH:
175g (sliced into strips)
2 slices (Schar brand)
20g
25g (Paxo brand)
50g
25g (freshly chopped)
1 (medium sized)
1 (sliced)
1 tablespoon (Koko brand)
1 teaspoon
Set-up your flour, egg wash and breadcrumb chain, by putting each one into a bowl of its own.
Next, dip a fish finger slice into flour first, patting off any excess. Then dip it into the egg wash and finally, coat well in breadcrumbs. Repeat for all the fish pieces.
Once battered, heat 2 teaspoons of coconut oil in a pan until the oil gets hot, then add the fish fingers to the pan. Alternatively (for optimal results) you can use an air fryer to cook the fish fingers, by brushing the melted coconut oil onto the fingers before frying.
Cook the fish fingers for 3-4 minutes (on each side) before placing to one side and allowing them to cool.
Next, prepare the sandwich. by adding the tartar sauce to each slice of bread.
Then add the fish fingers, salad greens, chopped parsley and sliced gherkins to complete the sandwich.
Slice the sandwich in half (if you're that way inclined) sit back and enjoy!
