INSTRUCTIONS

Start by heating a large frying pan over medium-high heat. Add ½ the butter to the pan then add the mushrooms and cover the pan with a lid.

Allow the mushrooms to fry until golden brown then add the garlic and oregano. Allow to cook for another minute then season with salt, and pepper. Then remove from the heat and set aside.

Next, butter one side of each slice of bread before placing one slice of bread (butter side down) in a frying pan.

Then add 1.5 slices of cheese to the bread, before adding (in order) the mushrooms, ham and the other 1.5 slices of cheese. Place the final slice of bread on top (butter side up).

Next, set the hob heat to low-medium, then allow the bread to toast in the pan while the cheese melts. Once the bottom piece of toast is browned, carefully flip the toastie and cook the other piece of bread. Using a pan lid will melt the cheese slightly faster.

Once the other side is nicely toasted remove and place on a plate, cut in half and wait for a few minutes to cool.

Then serve with a bistro salad and low sugar ketchup.

So there you have it! A healthy Ham and Cheese Toastie Recipe that's perfect for lunch or dinner, I hope you find it as tasty as I did!
