Introducing:
SHAPESHIFTERS SPICY CHICKEN RAMEN WITH RICE NOODLES
HOMEMADE RAMEN RECIPE:
250ml (Tesco brand)
175g

½ thumb sized portion (chopped)
1 dessertspoon
2 teaspoons
½ teaspoon
¼ teaspoon
TOPPINGS:
25g (sliced)
25g (chopped)
25g (sliced)
½ thumb sized portion
¼ wedge
Preheat your oven to 170 degrees.
Place the chicken breast in a greaseproof paper parcel, before adding in the chopped ginger, balsamic vinegar and coconut oil. Then add to the preheated oven to cook for 20-25 minutes.
Whilst the chicken is cooking, add the chicken stock/broth to a saucepan, then add in the pak choi, broccoli stems, salt, and pepper. Before simmering for 20 minutes.
Next, prepare your chosen toppings.
Then prepare some boiling water, which has been salted in a saucepan, before adding the rice noodles for 5 minutes (prior to the chicken being cooked).
Sieve off the rice noodles after 2-3 minutes.
Take the chicken out of the oven, before slicing it into chunks.
Finally, add the chicken stock/broth to a deep bowl with the pak choi and broccoli. Then add in the rice noodles, chicken chunks and toppings to finish.
Serve and enjoy!
