Healthy Homemade Fish and Chips

Introducing:

SHAPESHIFTERS HOMEMADE FISH AND CHIPS WITH MINTED MUSHY PEAS

ingredients (to serve 1)

HOMEMADE FISH:

FRESH COD LOIN

200g (patted dry)

Flour (plain white)

15g (seasoned with salt and pepper)

seasoned breadcrumbs (gluten free)

2 tablespoons (Paxo brand)

egg (white)

1 (whisked)

coconut milk (unsweetened)

2 tablespoons (Koko brand)

tartar sauce

1 tablespoon

coconut oil

1 teaspoon

HOMEMADE CHIPS:

POTATO

150g (sliced and parboiled until soft)

coconut oil

1 teaspoon (brushed onto the chips)

MINTED MUSHY PEAS:

garden peas

100g (frozen)

mint sauce

1 teaspoon

Himalayan salt

To taste

pepper

To taste

INSTRUCTIONS

Start by coating your parboiled chips in coconut oil before adding them to a preheated oven at 170 degrees. You can also use an air fryer for the chips if you have one.

Then whisk the egg and coconut milk together to create an egg wash, before setting up the bowls for the breadcrumbs and flour.

Next, dip the dry cod into the seasoned flour (patting down any excess), then dip into the egg wash, and finally the breadcrumbs (ensuring it is well covered in both). Before adding to a preheated pan, containing 2 teaspoons of melted coconut oil, to be fried off for 2-3 minutes.

Then after frying, add the cod to a baking tray along with the parboiled chips.

Next, bring the frozen peas to a boil in a saucepan for 3-4 minutes, then drain off and add to a bowl. Add your mint sauce and seasoning to the peas before mashing until 'mushed'.

Once the cod has cooked through and the chips have gone crispy, add to a plate with your mushy peas and 2 tablespoons of tartar sauce.

Then serve and enjoy.
