Introducing:

SHAPESHIFTERS DOUBLE CHOCOLATE CHIP BANANA BREAD

ingredients (to serve 1)

protein BANANA BREAD recipe:

collagen protein (unflavoured)

25g (Bulk brand)

powdered oats (gluten free)

55g (Alara brand)

banana

150g (very ripe)

egg

1 large

70% dark chocolate (diced into choc chips)

16g (Green & Blacks)

dark chocolate spread (sugar Free)

1 tablespoon

cocoa powder

1 teaspoon

apple cider vinegar

½ teaspoon

stevia (sweetener)

To taste

INSTRUCTIONS

Preheat your oven to 170 degrees.

In a bowl, mash your banana until runny. Then add the egg and whisk by hand.

Add the chocolate spread, Stevia, and apple cider vinegar. Then continue to whisk.

Once you have a nice batter texture, add the oat flour, collagen powder, cocoa powder and mix well. (If the texture is too thick, add a splash of coconut milk). Then add the chocolate chips.

Add the batter to a rectangular tray lined with grease proof paper.

Once the oven is heated to 170 degrees, place the tray in the oven and bake for 15-20 minutes. You'll know its ready when you can stick a fork into the banana bread and pull it out again without any batter stuck to the fork.

Then sit back, allow your dessert to cool and enjoy!
