SHAPESHIFTERS CHOCOLATE PROTEIN MUFFIN WITH CHOCOLATE ICING
glazed PROTEIN MUFFIN RECIPE:

CHOCOLATE ICING:
50ml (Koko brand)

20g (Sweet Freedom brand)
Start by preheating your oven to 180 degrees, brushing a muffin tin lightly with melted coconut oil.
Next, whisk the egg whites into a light fluffy mixture that wouldn't spill if you turned the large mixing bowl upside down.
Then add in the pumpkin puree, apple sauce and coconut milk before whisking together thoroughly. Then mix in the remaining muffin ingredients until well combined.
Next, evenly spread the muffin mixture across the oiled muffin tray before adding to the oven. Then cook the muffins for 10-12 minutes until firm.
Meanwhile, mix together the Chocolate Shake Shifters, coconut cream and chocolate sauce to create the chocolate icing. Topping up with small amounts of coconut milk to create an 'icing consistency'.
Next, remove the Muffins from the oven and let cool for 15 minutes, before glazing each muffin with the chocolate icing using a spatula.
Serve and enjoy.
